Peach, Prosciutto, and Ricotta Crostini 


This was another appetizer I made for my wife’s birthday. I had saved the recipe as it sounded like a fun thing to make. Plus it had peaches. And prosciutto which is kind of like bacon. You can read the recipe here

These turned out really well. Nice flavor and pretty easy to make. This is kind of one of those dishes where you can make as little or as many as you’d like. I knew I wanted to make more than the 12 but wasn’t necessarily setting out to double it. In the end I think I got 22 slices of bread out of the ciabatta loaf I bought and then had enough peaches and prosciutto for about 20. 

Instead of grilling the bread I put it in the broiler on low for a few minutes. Enough to make it a little crunchy but not enough to put any color on the bread. I didn’t quite measure the ricotta but it was about a tablespoon per crostini. And when it came time to do the honey, I had all of hem on the serving platter and drizzled it over all of them at once. 

Definitely an easy, do-it-how-you-seefit recipe. And a good one at that.
