Lemon Crinkle Cookies

  
This was the last cookie I made in my most recent round of holiday baking. I found the recipe in one of those posts that gets shared (and shared and shared) on Facebook. It looked intriguing enough to try it. Interestingly, this was a “random” cookie for me to make yet one of the ones that I got the most compliments on. Go figure. 

They are easy enough to make and do taste pretty good. They are the most awesome things in the world (my opinion) but there were a few who commented that they were. 

  • 1 box lemon cake mix
  • 1 large egg
  • 2 cups cool whip, thawed
  • Powdered sugar 

Mix the first three ingredients in a bowl. The dough/batter will be sticky. Shape into tablespoon sized balls and roll in the powdered sugar. Bake at 350 degrees for about 10 minutes (edges should start to brown). Cool on the pan for 1 minute and then move to a wire rack to cool completely. 

I may have let mine go a little longer than 10 minutes as they still seemed undone in the middle. Either way, be sure to let them cool completely before moving them (boxing them up, etc.). They need to “set” so to speak and cooling them will do that.
