Roasted Baked Potato

  
This was another one of those recipes that float around on Facebook. The effort is minimal on putting these together and, while I felt they dried out a little bit, provides a different take on the baked potato. 

Simply cut the potato in half lengthwise and then cut partially through in both directions, creating the cube pattern you see in the picture. Rub with olive oil and sprinkle with seasonings. It suggests sea salt, garlic, onion and black pepper. I went for garlic salt and black pepper. Use any you like, seasoned salt might be good also. 

Place face side down on a baking sheet. Bake at 400 degrees for 30 minutes. Turn over and finish baking (about20 minutes) until browned. Top with cheese or other favorite baked potato topping. 

I didn’t add anything else to the potato at the end. I felt that these turned out okay, but they were nothing special.
