Leigh’s Chicken Salad



I’m not sure exactly who “Leigh” is but they came up with a pretty good recipe for chicken salad. This definitely worked as something to eat by itself or with crackers/chips. Given the size of the grapes and apple pieces, it wasn’t going to work as well putting it between bread for a sandwich. You might be able to put it in something like a bun or a tortilla (for a wrap) but I feel like you would need to cut the grapes and apples smaller if you just wanted to put it between two pieces of bread. 

10.5 ounce canned chicken, drained
1/2 cup cream cheese, softened
1/2 cup mayo
1/2 cup grapes, sliced
1 Granny Smith apple cut into bite sized pieces
1/2 cup sliced almonds, toasted
1/2 wedge freshly squeezed lemon juice
Salt and pepper to taste

Mix all ingredients. Chill overnight or for at least 4 hours. 

I did not toast the sliced almonds and skipped the last two ingredients. Turned out pretty good.
