Sorry for the delay in posting folks. A vacation and a really busy schedule has prevented some cooking from taking place, at least cooking that I wanted to post about.
This recipe came from Facebook, another one of those that makes the rounds periodically and I saved it as I found the concept interesting.
This is called a “zero carb” pizza as the crust isn’t the type of crust you’d might normally have on a pizza. The crust is a combination of egg and mozzarella cheese. It was an interesting concept. It was good but a little different. It didn’t quite turn out as expected as I had put some foil down in the pan to keep it from sticking to the pan. Well, then it stuck to the foil (of course) which actually made it difficult to get off of the foil. And then a layer wound up sticking to the foil.
Next time I would either use parchment paper or just leave it in the pan and take my chances. The other thing was that it didn’t say what kind of pan to make it in. Well, it said “cookie sheet” but that it kind of arbitrary. I choose a jelly roll type pan (one that was about 10×15) and spread it out. That resulted in a thinner layer than maybe was needed. And may have added to the sticking to the foil. Putting it in a 9×13 pan might work better. It would have been a little thicker.
They way it came out it was hard to pick up and eat so forks was the method of eating it. But, it still tasted like a pizza despite not having the typical crust. This is on the list of things to probably try again.
7 cups of shredded mozzarella
1 teaspoon basil
1 teaspoon oregano
Mix together and spread into pan. Bake at 450 degrees for 15 minutes.
Remove from oven, add toppings of choice and bake for another 10 minutes.
For our toppings we used pizza sauce, sausage, black olives and mushrooms. Plus a little more mozzarella cheese on top.
