What’s not to like about this dish?
Pork – check.
Bacon – check.
Cheese – check.
Granted, it doesn’t quite sound like it would go together but it was fantastic. You can read the recipe here. It is pretty simple to put together. There isn’t a lot of work or mixing of ingredients.
Simply cover the pork chops with the brown sugar/garlic mix, top with bacon and bake. Add cheese, let melt, and done.
I didn’t really make any changes except that my bacon was long enough that I cut each piece in half and payed them on top rather than tucking the ends under the pork chops. I actually had visions of un-cooked bacon hiding under the pork when it was all done. I also chose to pour off the fat/sugar mix before putting the cheese on. It just felt like the right thing to do.
And that was the only disappointment with this recipe, if you even want to call it that. The brown sugar melted and ran off the pork chops. It left some flavor but I felt that what we wound up with was the garlic trapped between the pork and bacon with no other mix. I also could have let it bake a little longer to cook the bacon more (or briefly turned the broiler on) before adding the cheese. That bacon turned out fine but might have been better if it was a little crispier.
But, it was still great. Highly recommend this dish.
Oh, and lining the pan with foil is a great idea. Really helps with the clean up.
