Orange Chipotle Spiced Pecan Mix

After a fairly successful go at making some spiced nuts and a so-so try at some other nuts, I came across another recipe for some orange-chipotle spiced nuts and thought I would give it a try.

Ultimately, these turned out well, at least from an appearance standpoint. They baked up nicely and looked pretty good. The only downside, in my mind, was that they didn’t really taste like orange, nor were they really spicy. Not that I thought they would be really spicy but there wasn’t much there at all. There was a little bit of a kick at the end once you ate them, but that was about it. It was a little disappointing. I didn’t make any changes to the recipe, just doubled it as that is how many pecans were in the package I had bought. I used the rind from two smaller oranges to get the right amount of rind but then only the juice from one of the oranges.

Nice to snack on, but it was missing the “oomph” that made it worth the effort.
