Found this recipe, or rather concept, floating around on Facebook and thought it would be good to try for Sunday breakfast this last weekend. The turned out great and worked perfectly.
The concept is fairly simple – spray a muffin tin with non-stick spray, add in a little bit of whatever you want that you might normally put in an omelette (or add to scrambled eggs, etc.) and pour scrambled eggs over the top to fill the muffin tin up. Bake at 350 for 30 minutes. Let sit a minute or two and then turn the pan over and shake out the omelette muffins.
For mine I had pre-made everything Saturday morning so it was pretty quick to simply sprinkle everything in and mix up the eggs. I used a little bit of bacon, sausage, red bell pepper and shredded Swiss cheese. I scrambled a dozen eggs and managed to get it all poured in to the muffin tin (some were pretty full).
I’d mark this down as a recipe to save and make again, varying the ingredients. It’s also an easy way to personalize breakfast if you can remember which cups have which items.
