Sloppy Joe Tater Tot Casserole

Yet another recipe from Buns In My Oven, this time for Sloppy Joe Tater Tot Casserole.

Overall? Really good. Not too difficult to put together, the flavors come together nicely. The girls (age 6 and 4) didn’t even say two words – or one word – about the red pepper and onions in it. Maybe they were distracted by the tater tots. Or, it just tasted good which trumps any question of – “what is that”?

Actually, they were not quite tater tots but rather potato “rounds”, a much smaller item. But, that’s what the store had. For some reason there were no tots. I also may have used more than it called for but the bag was twice the size of what it called for and I made sure that I covered the top. I also used 8 ounces of Colby Jack cheese and the Manwhich was regular instead of bold. And yes, it was actually Manwhich. Part of the reason I made this was the fact that I found a can of Manwhich down in the cupboard.

The only downside was that the tater tots didn’t reheat as well with the leftovers. It was still good but reheating tots in the microwave didn’t work so well.
