Here is another recipe from the Buns in My Oven blog, this time one for Corn and Chicken Chowder. I picked this recipe because it just sounded pretty good. (And it has bacon.) And it was good. Really good in fact. Plus my kids liked it which is always a plus. The 4 year old liked it so much that she was shoveling it in her mouth as fast as she could. I finally had to tell her to stop as she wasn’t chewing…….or swallowing. She was just kind of holding it in her mouth. And both of them decided that they should also pick up the bowl and drink it (even though it’s not really that kind of soup). So, it was good.
As far as making it, it went pretty smoothly. It did take a little longer than planned as recipes don’t often tell you all the time it will take or maybe I just don’t pay attention. Case in point, it talks about bringing it to a boil and letting it cook for 15 minutes. Well, it doesn’t say that it might take 10-15 minutes to come to a boil. Which just increases the time needed before you can eat it. But, it wasn’t too bad.
I did use four potatoes as mine were a little smaller. And I used the canned corn rather than cutting fresh. I think it worked great.
A good meal. I completely agree with her that soup can be a meal. Even if it isn’t as hearty as this chowder.
