Bacon Wrapped Potato Wedges

While these contain arguably the greatest food ever (bacon), these turned out rather uninspiring to me. It was just a potato wedge wrapped in bacon. No spices, nothing to give it any flavor other than the bacon.

Quite simple – cut a potato in half and then each half again to get four wedges. Wrap each wedge with a piece of bacon. I used thick cut but thinner might work better (cook quicker). Place on a wire rack on top of a rimmed baking sheet. Line the baking sheet with foil. It will make clean up easier. Bake at 400 degrees for 25-35 minutes. Or until bacon is cooked and the potatoes pierce easily with a fork.

Mine took about 40 minutes. Using the thicker bacon took longer. I might try this again if I add some garlic butter to the potatoes before wrapping them in bacon and maybe sprinkling some cheese on top to melt towards the end.
