So, the interest in making this had more to do with the concept/presentation than the actual recipe. And what that really means is you can use any meatloaf and mashed potato recipe that you want to create it. It’s how you create it that is the difference.
In the end it was a pretty good try at it although I will admit that my “frosting” skills are not that great. I did have issues with the liners. It said to use foil liners sprayed with non-stick. I used regular liners (although they were in a foil liner container – go figure) sprayed with non-stick. That really didn’t work. As you can see from the picture, the liners came off very easily and I probably could have used no liners and just sprayed the pan.
I also used boxed mashed potatoes (don’t judge, it was quick and easy which is what I needed at that moment) but I did add some cheese and extra milk.
In the end the kids thought it was cool (and they helped mix the meatloaf – by hand) which was the whole point in trying it anyway. Mission Accomplished.
