Three Cheese Rigatoni Bologonese

IMG_1524I saw someone post about this on Facebook so I decided that I needed to try it.  After reviewing some recipes online I was a little hesitant as every recipe called for zucchini and, frankly, I don’t like zucchini unless it is in bread/muffin form.  But I decided to try it anyway.  I found a small zucchini (probably because it is our of season) and sliced it really thin.  In the end you could barely tell it was there.  I choose to use rigatoni rather than mostaccioli  like the recipe called for mainly because I had it in the cupboard.  The type of pasta, in my opinion, doesn’t matter that much.  Not a bad dish but not spectacular.
