If you like egg salad, these are great. If you don’t, you probably shouldn’t since it is basically egg salad, just presented a little different. It says it makes 4 servings which I’m sure it does if you really pile the mixture onto the tortillas. We probably got 5-6 out of it (counting one smaller one we split between the girls). As with everything (almost) in our house I adjusted this to not be spicy, leaving out the cayenne pepper. Oh and the “BLT” stands for bacon, lettuce and “tortilla”.

1/3 cup mayo
1 TBSP yellow mustard
1/8 TSP cayenne pepper
8 hard-boiled eggs, coarsely chopped
1/2 cup red onions
4 flour tortillas
4 lettuce leaves (or a bunch of shredded lettuce)
4 slices of cooked bacon
Mix mayo, mustard and cayenne in a medium bowl until blended. Stir in eggs and onions.
Top the tortillas with lettuce, egg salad and bacon (the whole piece if doing 4 but we broke it up and used less than 1 piece per). Fold in both sides of each tortilla, then roll up. Either eat whole or cut in half.
