Egg Salad “BLT” Wraps

IMG_1387If you like egg salad, these are great.  If you don’t, you probably shouldn’t since it is basically egg salad, just presented a little different.  It says it makes 4 servings which I’m sure it does if you really pile the mixture onto the tortillas.  We probably got 5-6 out of it (counting one smaller one we split between the girls).  As with everything (almost) in our house I adjusted this to not be spicy, leaving out the cayenne pepper.  Oh and the “BLT” stands for bacon, lettuce and “tortilla”.

(recipe take from the Kraft Food and Family magazine, Fall ’12)

1/3 cup mayo
1 TBSP yellow mustard
1/8 TSP cayenne pepper
8 hard-boiled eggs, coarsely chopped
1/2 cup red onions
4 flour tortillas
4 lettuce leaves (or a bunch of shredded lettuce)
4 slices of cooked bacon

Mix mayo, mustard and cayenne in a medium bowl until blended.  Stir in eggs and onions.

Top the tortillas with lettuce, egg salad and bacon (the whole piece if doing 4 but we broke it up and used less than 1 piece per).  Fold in both sides of each tortilla, then roll up.  Either eat whole or cut in half.
