Standard Saturday Morning Breakfast


I thought it would be appropriate to start this off with a staple in the house – pancakes and bacon.  Nothing really too fancy.  I’ve found that baking the bacon – 400 degrees until it’s done (time will vary) – works better than frying it in a pan.  It’s cleaner (no grease splattering) and allows it to stay out of the way while you’re doing something else.  Plus, it results in nice flat pieces of bacon.  Just put foil down on a cookie sheet to keep it from sticking to pan.

Pancakes –

2 cups flour
2 TBSP Baking Powder
2 TBSP Sugar
1 TSP Salt
2 Eggs
1 1/2 Cups Milk
1/4 cup oil

Combine all ingredients in a bowl and cook on a hot griddle (ours is an electric griddle at about 325 degrees).  I use a 1/3 cup scoop for the batter.  It makes about 12 pancakes.
